I am all about making domestic life as simple as possible while still having that 'home made' feel to life and these biscuits certainly fit the bill.
The actually only have 3 set ingredients (all of which are generally in the pantry) and the 4th can be whatever takes your fancy.
Plus you can freeze the mixture and then just slice it up and bake it for 15 minutes when you need it... which means you are only ever 15 minutes away from 'oh these, I just whipped them up this morning'.
Ingredients:
1 cup icing sugar
250g butter
2 1/2 cups plain flour
Plus whatever else you like - I often add orange/lemon zest, choc chips (or broken up Easter Eggs, stolen from your children, if that's all you have), crushed nuts or just keep the mix plain and press them in to 100s & 1000s before you bake them.
Method:
Use a mixer to beat the butter and icing sugar until fluffy then add the flour and whatever your 4th ingredient is. Kneed until combined then divide in half and roll into two logs. Wrap in Glad Wrap.
At this point you can either put them in the fridge for 30 minutes and then unwrap, slice in to 1cm think pieces, pop on a tray (I recommend using baking paper) and bake in a moderate oven until slightly brown (about 10 minutes) or you can freeze the logs for up to 3 months and then just slice while frozen and bake until slightly brown (about 15 minutes).
Too easy (and that's what I'm all about when it comes to cooking!).
